Almond Madeleines Recipe

Origin: French      Period: Traditional

Ingredients:

2 eggs, separated
100g sugar
85g unsalted butter
30ml toasted almond oil
190g sifted plain flour
1 tsp baking powder
100g ground, toasted, almonds

Almond Madeleines Preparation:


Method:

Soften the butter (but do not allow to melt). Combine with the almond oil. Combine the egg yolks and sugar then stir-in the butter mixture.

Mix the baking powder and flour together then stir into the egg mixture. Beat the egg whites until stiff and fold into the mixture. Add the ground almonds and place a generous amount of the mixture in buttered and floured Madeleine moulds (so that each is almost half full). Place in an oven pre-heated to 200°CC and bake for between 10 and 15 minutes, until golden brown in colour.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
