Alkovendressing Recipe

Origin: German      Period: Traditional

40 g salt
50 g sugar
1l oil
1/2l stock
3 eggs
3 shallots
3 garlic cloves
40ml soy sauce
1 tbsp sweet mustard
100g chilli sauce
raspberry vinegar, to taste

Alkovendressing Preparation:


Method:

Put the eggs, mustard, garlic and shallots in a blender or liquidiser with the sugar and salt. Start blending, then add the oil, stock and other flavourings a little at a time briefly blitzing after each addition. Finally whirl-in sufficent raspberry vinegar to taste.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
