Alice Springs Chicken Recipe

Origin: Australia      Period: Traditional

Ingredients:

150ml Honey Mustard Dressing
4 skinless chicken breasts
1 tbsp vegetable oil
300g sliced mushrooms
2 tbsp butter
salt and black pepper, to taste
paprika, to taste
12 slices bacon, cooked
90g grated Monterey Jack cheese
90g grated mature Cheddar cheese

Alice Springs Chicken Preparation:


Method:

Pour the honey mustard dressing into a bowl and add the chicken. Turn to coat and place in the refrigerator to marinate for at least 2 hours (preferably over night). Heat the oil in a frying pan and fry the chicken for about 4 minutes per side, until golden brown.

Transfer the chicken to an oven-proof dish and brush with the reserved honey mustard sauce. Season the chicken liberally then layer the bacon across each chicken breast.

Add the butter to a pan and fry the mushrooms until soft. Spoon these over the chicken then sprinkle with the cheese. Cover with a lid or with foil and place in an oven pre-heated to 180°C and bake for about 20 minutes, or until the cheese is molten and the chicken is done all the way through.

Dust with paprika and serve with the remaining honey mustard dressing as a dipping sauce.
