Al Burtugal Wal Zabib Al Mutabal
(Creamy Paprika Chicken) Recipe

Origin: Egypt      Period: Traditional

Ingredients:

100g granulated sugar
120ml water
100g sultanas
2 tbsp lemon juice
2 cinnamon sticks
1/2 tsp ground allspice
1 tbsp crystallized ginger, finely minced
3 large oranges

(Creamy Paprika Chicken) Preparation:


Method:

Combine the sugar and water in a saucepan and gently bring to a boil before adding the sultanas, lemon juice, cinnamon sticks, allspice and ginger. Reduce to a simmer then cover and cook for about 20 minutes, until the syrup has thickened. Take off the heat, pour into a bowl then refrigerate for 10 minutes to cool.

Using a sharp knife remove the ends of the oranges then cut away the pith and the peel. Turn the oranges over onto their sides and slice into 12mm rounds. Cut each round into halves or quarters, removing any pips, then transfer these (and any juice) to a bowl.

Pour the cooled syrup over the orange pieces and stir very gently to combine. Cover the bowl and chill in the refrigerator for at least 2 hours (preferably over night). Typically this is served over ice cream or it's spooned over sponge cake or steamed sponge pudding.
