Agnesko S Presni Kartofi
(Lamb with New Potatoes) Recipe

Origin: Russia      Period: Traditional

Ingredients:

450g lamb, cubed
3 tbsp olive oil
1 bunch spring onions, chopped
1 tbsp plain flour
salt and freshly-ground black pepper, to taste
200g tomato purée
1 tsp paprika
250ml hot water
900g new potatoes, scrubbed
2 tbsp dill, snipped
2 tbsp fresh parsley, chopped

(Lamb with New Potatoes) Preparation:


Method:

Heat the oil in a pan and use to fry the lamb until well browned then add the spring onions and fry for a further 5 minutes. Sprinkle the flour over the top and mix well to combine then season with salt and black pepper, to taste.

Now stir in the tomato purée and the paprika and fry for 1 minute. Add the water and bring to a simmer. Cook for 30 minutes then add the potatoes, return to a simmer and cook for 20 minutes more. Serve on a bed of rice or pasta and garnish with the dill and parsley.
