(Watermelon Barbecue Sauce) Recipe

Origin: Philippines      Period: Traditional

Ingredients:

1kg chicken, cut into serving portions
500g potatoes, peeled and quartered
8 garlic cloves, minced
1 large onion, diced
1 red bell pepper, quartered and de-seeded
1 green bell pepper, quartered and de-seeded
500ml chicken stock
250ml passata (tomato sauce)
75g breadcrumbs
salt and black pepper, to taste
oil, to fry

(Watermelon Barbecue Sauce) Preparation:


Method:

Add the oil the the base of a flame-proof casserole and when hot use to fry the chicken until browned on all sides. Remove the chicken at this point and set aside. Add the garlic and onion to the pot and fry until softened (about 6 minutes) then stir-in the stock and tomato sauce. Bring the mixture to a boil then return the chicken to the pot. Bring back to a boil then reduce to a simmer, cover and cook for about 45 minutes or until the chicken is cooked through and tender.

Add the potatoes to the pot and cook for a further 25 or 30 minutes, or until just tender then add the bell peppers and season well. Stir-in the breadcrumbs and cook, uncovered for about 10 minutes or until the sauce has thickened. Serve hot with sticky rice.
