African Green Pepper and Spinach Recipe

Origin: East Africa      Period: Traditional

Ingredients:

1 medium onion, chopped
1 green bell pepper, chopped
1 tbsp oil
1 medium tomato, chopped
450g fresh spinach, stems removed
3/4 tsp salt
1/8 tsp pepper
60ml peanut butter

African Green Pepper and Spinach Preparation:


Method:

Add the oil to a large heavy-bottomed pan and heat on medium heat. Add the onion and cook until soft before adding the tomato and spinach. Cover and cook gently until the spinach is tender (about 5 minutes) then add the salt, pepper and peanut butter. Stir-in the peanut butter to incorporate completely then serve hot.
