African Crêpes RecipeOrigin: Cameroon Period: traditional |
Ingredients:These are classical Cameroonian thin pancakes that incorporated mashed bananas into the pancake batter.
140g flour
African Crêpes Preparation:Method:Combine the flour, sugar and salt in a bowl then whisk in the milk, adding a little at a time so you get a smooth batter. Add the mashed bananas and stir to combine thoroughly. Add a little oil to your frying pan and when hot add about 100ml of batter. Spread this with the back of a spoon or ladle until if forms a thin layer. Cook for about 2 minutes, or until the edges begin to crisp then flip and cook on the other side for about 2 minutes more. Roll tightly, dust with icing sugar and serve. |
