African Crêpes Recipe

Origin: Cameroon      Period: traditional

Ingredients:

These are classical Cameroonian thin pancakes that incorporated mashed bananas into the pancake batter.

140g flour
50g sugar
2 tbsp sugar
pinch of salt
360ml milk
4 large, ripe, bananas, mashed
groundnut oil for frying
icing sugar to dust

African Crêpes Preparation:


Method:

Combine the flour, sugar and salt in a bowl then whisk in the milk, adding a little at a time so you get a smooth batter. Add the mashed bananas and stir to combine thoroughly.

Add a little oil to your frying pan and when hot add about 100ml of batter. Spread this with the back of a spoon or ladle until if forms a thin layer. Cook for about 2 minutes, or until the edges begin to crisp then flip and cook on the other side for about 2 minutes more.

Roll tightly, dust with icing sugar and serve.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
