Aegean Salad Recipe

Origin: Greek      Period: Traditional

This is version of the classic rice-based salad that you'll encounter in many places along the Aegean coast of Greece.

Ingredients

230g brown rice cooked and allowed to cool
80g spring onions, finely chopped
1 medium cucumber, peeled and coarsely chopped
70g fresh parsley sprigs
250g crumbled Feta cheese
100g pitted Kalamata olives (or other black olive)
1 large garlic clove, very finely chopped
120ml olive oil
60ml lime juice
60g finely-chopped dill
freshly-ground black pepper


Aegean Salad Preparation:


Method:

First prepare the vinaigrette by mixing together the olive oil, lime juice, dill and a generous twist of black pepper.

For the salad, simply combine the remaining ingredients in a bowl, add a twist of black pepper and the vinaigrette. Toss to mix and serve immediately.
