Ingredients:
450g sugar
Acid Drops Preparation:Method:Place the sugar, water and cream of tartar in a heavy-bottomed saucepan, heat gently until the sugar has completely dissolved then boil the mixture without stirring until the temperature is 154°C (use a confectioner's thermometer). Remove from the heat at this point and immerse the bottom of the saucepan in cold water to prevent further cooking. Mix the tartaric acid with a little warm water and add a few drops of lemon essence, stirring well. Add the sugar mixture, stirring all the while to ensure that it is fully combined. Allow to cool for a few minutes then using a teaspoon that's been lightly oiled place drops of the mixture onto an oiled baking sheet or marble slab. Allow the acid drops to cool and set then wrap in cellophane and store in an air-tight container. |
