Achar Recipe

Origin: Guyana      Period: Traditional

Ingredients:

1 onion, chopped
2 garlic cloves, chopped
1 tbsp vegetable oil
1 tbsp curry powder
3 jalapeño chillies, thinly sliced
3 tomatoes, chopped
lime juice
salt to taste

Achar Preparation:


Method:

Fry the onions and garlic in oil until the onion is soft. Add the curry powder, tomatoes, jalapeño chillies and simmer on low heat until the tomatoes are cooked through and the mixture has attained a sauce-like consistency. Season with the salt and lime to taste.

Bottle in a clean, hot jar. Allow to mature for a couple of weeks before use.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
