Ingredients:
800g plain flour
Accra Banana Peanut Cake Preparation:Method:Sift the flours, baking powder, salt and baking soda into a bowl. Meanwhile, in a separate bowl cream together the butter and sugar then blend-in the eggs. Slowly fold the dry ingredients into the creamed butter, alternating with the mix of mashed bananas and peanuts. Mix thoroughly and tip the mixture into a greased 22 x 30cm baking pan. Place in an oven pre-heated to 170°C and bake for 30 minutes. Test with a toothpick and when this comes out clean the cake is done. Combine the cinnamon and icing sugar and use this to dust the cake as soon as it come out of the oven. Allow to cool and tip out of its tin. |
