A New Hot Pot
( A New Hot Pot) Recipe

Origin: Britain      Period: Traditional

Ingredients:

450g beef ribs or stewing steak
2 sausages, quartered
2 carrots, scrubbed and cut into thick rounds
1 turnip, peeled and chopped
1 onion, sliced
2 leeks, sliced into rounds
450g potatoes, quartered
dripping, or butter to fry
stock
salt and freshly-ground black pepper

A New Hot Pot
( A New Hot Pot) Preparation:


Method:

Dice the meat or cut into pieces then melt the dripping in a pan, add the beef and fry until golden brown. Cover with a very little stock then add the onion, leeks, carrots and turnip. Season to taste, bring to a simmer then cover and cook gently for 1 hour.

Add the sausages and potatoes then top-up the level of stock, return to a simmer then cover the pan and cook for a further hour, or until the potatoes are cooked through. Serve immediately, accompanied by steamed kale or Savoy cabbage.
