7-Minute Frosting Recipe

Origin: America      Period: Traditional

Ingredients:

300g sugar
1/4 tsp cream of tartar (or 1 tbsp golden syrup [corn syrup])
1/8 tsp salt
80ml water
2 egg whites
1 1/2 tsp vanilla extract

7-Minute Frosting Preparation:


Method:

Combine the cream of tartar (or syrup), salt, water and egg whites in the top of a bain-marie (double boiler). Whisk briskly for 2 minutes then set over a pan of simmering water (do not allow the top pan to touch the water) and beat constantly (preferably with an electric mixer on high speed) for 7 minutes. Take off the heat, beat in the vanilla extract and use.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
