Welcome to Celtnet's Milk and Milk-products Recipes Page — This is a continuation of an entire series of pages that will, I hope, allow my visitors to better navigate this site. As well as displaying recipes by name, country and region of origin I am now planning a whole series of pages where recipes can be located by meal type and main ingredient. This page gives a listing of all the milk and milk-associated recipes added to this site. Humans are mammals and as such, milk is a fundamental part of every human child's early diet. Yet, as humans age the ability to digest the basic milk sugar, 'lactose' is lost. This phenomenon is known as 'lactose intolerance'. In fact, a large majortiy of the earth's population cannot properly digest lactose and for them many milk products cannot be consumed. Indeed, it seems that the ability to both tolerate and digest lactose arose in human populations after the first Orientals and Europeans left Africa and ocurred somewhere in the Mediterranean basin. Thus most Orientals and Africans are lactose intolerant whilst most European, Arabic and Indic pouplations are not. Subsequently another mutation in Africa (in the Masai and Hutu populations) led to the development of some lactose tolerance in those populations. Indeed, the ability to digest and use milk products can be very important to a poulation. It allows herd animals to be used for their milk as well as their meats and allows milk to be soured and stored as yoghurt (yogurt) and cheeses. cheese-based recipes are dealt with separately on this site and hear you will see a list of milk-based recipes containing milk, yoghurt, cream and sour cream etc. In Europe milk is such as basic ingredient that it is used ubiquitously in sauces, cakes, desserts and soups (the same is also true of the Middle East) and for yoghurt-based drinks in India. As a result the recipes presented here come, primarily, from the Eurasian lactose-tolerant conutries of the world but show the vast range of dishes in which milk can be included as a basic ingredient. The recipe here for moy-moy with pepper soup gives a vegetarian version of the classic West African 'pepper soup' (chilli-based stew). The moy-moy (or steamed black-eyed bean cakes) represent a Nigerian classic that's typically steamed in banana or plantain leaves.
