Vyne Grace (from A Forme of Cury)

Take Pork male fylett9 of Pork and rot hen half and myte hem to gobett9 and do hem in wyne ā Vynegr and Oynonns ymynced and tewe it yfere do þ9to gode powdors ā alt. ā sūe it forth.

Modern Redaction

Ingredients:

750g pork loin fillet
½ large onion, finely chopped
250ml red wine
75ml red wine vinegar
½ tsp cinnamon
½ tsp galingale
salt to taste


Method:

Preparation

Place the pork on a baking tray, drizzle with a little olive oil and roast in an oven pre-heated to 200°C for 40 minutes. When ready, take the pork from the oven and dice finely. Add the pork and the onions to a frying pan and fry until the onions just soften. When this point is rached add all the remaining nigredients to the pan.

Once the wine is boiling reduce to a simmer and continue cooking for about half an hour. Tip into a bowl and serve.
