Take peer9 and pare hē clene. take gode rede wyne et mulberes oþ9 ſanndr9 and ſeeþ þe peer9 þ9in et whan þei buth yſode, take hē up, make a ſyryp of wyne greke, oþ9 v9nage wt blaunche powdr9 white ſugr and powdor gyngr et do the per9 þ9in. ſeeþ it a lytel et meſſe it forth.

Ingredients:

6 pears, peeled, quartered and cored
400ml red wine
60ml port
400g mulberries (if you're not fortunate enough to have your own mulberry tree use blueberries)
450g sugar
1 tsp ground cloves
1 tsp grains of paradise
1.5 tsp ground cinnamon
3 tsp galingale


Method:

Preparation

Soak the pears and mulberries (or blueberries) in the red wine and port for at least two hours. At the end of this time, take the pears out and set aside. Add the sugar and spices to the wine and transfer to a saucepan. Simmer on a very low heat for at least an hour (by this time the fruit should have burst and the liquid should resemble a light syrup).

Pass the wine mixture through a strainer to remove the fruit skins then return to the heat and add the pears. Simmer for a further hour then allow to cool and spoon into a bowl. Serve garnished with a swirl or single cream and some sprigs of mint.
