Modern RedactionIngredients:
6 pears, peeled, quartered and cored Method:PreparationSoak the pears and mulberries (or blueberries) in the red wine and port for at least two hours. At the end of this time, take the pears out and set aside. Add the sugar and spices to the wine and transfer to a saucepan. Simmer on a very low heat for at least an hour (by this time the fruit should have burst and the liquid should resemble a light syrup). Pass the wine mixture through a strainer to remove the fruit skins then return to the heat and add the pears. Simmer for a further hour then allow to cool and spoon into a bowl. Serve garnished with a swirl or single cream and some sprigs of mint. |
