This recipe for blanche powder (also known as blaunceh powder) comes from a number of sources and is represented here as an 'average' recipe for the Medieval 'general purpose' spice mix that's employed to season both sweet and savory dishes.

Ingredients:

1 tbsp ground ginger
1 tbsp ground cinnamon
1 tbsp ground nutmeg


Method:

Simply grind all the ingredients together in a pestle and mortar and store in an air-tight jar. This will keep for several months.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
1 US cup of butter/margarine or sugar = 7 oz = 200g
