Translation: Take apples an boil them, and pass it through a strainer into a pot; than take almond milk & honey, and add, and grated bread, saffron, sandalwood, & a little salt, & put all in a pot & let it boil; & see that you stir it well, & serve it forth.

8 apples, peeled and cored Method:Boil the apples until very soft, then drain. Mash them until completely smooth then place in a clean pot and blend-in the almond milk, honey, saffron, breadcrumbs, saffron and food colouring. Cook on a low heat, stirring occasionally, until the potage is completely hot and has thickened to the desired consistency. Serve hot, spooned into bowls. |
