Original RecipeTo seeth Fresh Salmon (from The Good Huswifes Handmaid)To seeth Fresh Salmon. Take a little water, and as much Beere and salt, and put therto Parsley, Time and Rosemarie, and let all these boyle togeathere. Then put in your Salmon, and make your broth Sharpe with some Vinigar.

4 salmon steaks Method:Combine all the ingredients (except the fish) in a pan and bring to a boil. Reduce the heat to a simmer then place the fish in a shallow baking dish and add enough of the poaching liquid to cover 2/3 of the fish steaks. Cover the dish and place in an oven pre-heated to 200°C and bake for about 20 minutes, our until the fish becomes tender and flakes easily with a fork. |
