Cyw Iâr Bricyll
(Apricot Chicken)

Original Recipe

Cynhwysion:

2 ddarn o giw iâ r ar gyfer bob persion (8 i gyd)
2 foronen, wedi ei dorri'n denau
1 nionyn wedi ei dorri'n denau
500ml stoc llysiau
300ml hufen
llwy bwdin o saets, llawryf a basil
menyn i ffrio
pupur a halen i flasu

12 o fricyll aeddfed
1 llwy fwrdd o ddŵr
1 llwy fwrdd o siwgwr
1 llwy bwdin o flawd corn (wedi cymysgu a 2 llwy fwrdd o ddŵr)

Toddwch y menyn mewn padell a pan yn boeth ychwanegwch y cig gyda'r pupur a'r halen. Ffriwch nes mae'r cig wedi brownion yna ychwanegwch y llysiau, stoc a'r hufen. Dewch a'r cymysgfa i ledferwi yna ychwanegwch gaead a gadewch i'r cyfan goginio am 90 munud.

Tua hanner awr cyn i'r cig fod yn barod ychwanegwch y bricyl, dŵr a'r siwgwr i sosban. Coginiwhc ar dân isel gan droi'r gymysgfa yn gyson. Ar ol tua 10 munud ychwanegwch y gymysgfa blawd corn. Coginiwch am 15 munud arall yna stwnsiwch y bricyll.

Pan yn barod i weini rhowch y bricyll ar blŵt cyn gosod y cyw iŵr am ei ben. Gweinwch gyda reis plaen.

English Translation

Ingredients:

2 pieces of chicken meat per person (8 in all)
2 carrots, thinly sliced
1 onion, thinly sliced
500ml vegetable stock
300ml cream
1 dessert spoon each of sage, dried bay leaf and basil
butter for frying
salt and freshly-ground black pepper, to taste

12 ripe apricots
1 tbsp water
1 tbsp sugar
1 dessert spoon cornflour (mixed with 2 tbsp water)


Method:

Melt the butter in a pan and when hot add the meat and season. Fry until the chicken has browned then add the vegetables, the stock and the cream. Bring to a simmer then cover the pan and cook for 90 minutes.

About 30 minutes before the meat is ready add the apricots (stoned and halved), water and sugar to a saucepan. Cook on low heat, stirring constantly. After about 10 minutes add the cornflour slurry and cook for a further 15 minutes. At this point mash the apricots.

When ready to serve spoon the apricots onto a plate and place the chicken on top. Serve with plain rice.
