60ml sudd oren Saws MadeiraYn gyntaf dylid cymysgu'r gwîn Madeira y sudd oren a'r sudd lemwn a'i rewi nes ei fod yn hanner caled (hanner fordd i wneud sorbet). Wedi cyrraedd y pwynt yma dylid ei dynu o'r rhewgell a'i osod i'r neillty. Tra mae'r gwîn a'r sudd oren yn rhewi dylid curo'r gwynwy wyau gyda'u gilydd nes eu bod yn llawn aer. Ar y pwynt yma dylid berwi tecell ac ychwanegu'r dŵr i'r wiwgwr i wneud triog. Dylid rhoi powlen yr wyau mewn dŵr a rhew ac ynta gellid tollti'r triog yn araf am ben yr wyau gan droi'r cymysgfa nes mae'n oer. Ar y pwynt yma gellid tollti'r cymysgfa trioglyd am ben y gwîn a'r sudd oren. Mae'r saws yma yn gweithio am ben pwdin berw poeth (er enghraifft pwdin Eryri a dylid ei weini'n unionsyth.
English TranslationIngredients:
60ml orange juice Method:First mix together the Madeira, orange juice and lemon juice. Place this in the freezer and freeze until semi-solid (about half-way to a sorbet in consistency). Once the mixture has frozen sufficiently take out of the freezer and set aside. Now beat the egg whites until just white and full of air bubbles. Place this bowl in a larger bowl of iced water and boil a kettle. Pour the boiling water over the sugar to make a syrup and once the sugar has dissolve carefully pour this over the egg whites. Keep on adding syrup and mixing until the mixture is cold. Add this to the Madeira and citrus juice mixture, mix well and serve immediately over a hot boiled pudding (such as pwdin Eryri) and this should be served immediately. |
