English Translation

This is a traditional quiche-like pie that typically can be served as a starter, for a light supper or at picnics.

Ingredients:

300ml milk
175g shortcrust pastry
50g streaky bacon, finely chopped
2 eggs, beaten
2 tbsp parlsey, chopped
2 tsp plain flour
salt and black pepper

Method:

Roll the pastry out on a lightly-floured surface until large enough to cover the base of a 25cm flan or pie dish. Cover the base with greaseproof paper and baking beans then place in an oven pre-heated to 200°C and bake for 15 minutes. Remove from the oven, take out the beans and paper and set aside. Lower the oven to 170°C.

Fry the bacon in a pan until nicely browned then set aside. Mix the flour with a little of the milk until it forms a smooth paste then set this aside as well.

Break the eggs into a bowl then whisk in the milk and flour mix. Add the remainder of the milk along with the parsley. Mix well and season to taste. Scatter the bacon over the base of the prepared pastry before pouring the milk and egg mixture over the top. Place the pie in the oven and bake for about 30 minutes, or until the filling is set and coloured a golden brown.
