Original Recipe

Cynhwysion:

3 moryn wedi tafellu
240g o flodau broccoli
1 blodfresych wedi ei dorri'n glystrau
90g o bys gardd wedi rhewi

I'r Saws:
45g o fenyn
45g o flawd plaen
450ml o lefrith
120g o gaws coch (Lŷn neu Lancashire) wedi ei ratio
2 llwy fwrdd o fwstad Dijon
1/4 llwy de o halen
pupur du

Dowch a sosban fawr o ddŵr ychydig yn hallt i ferwi. Ychwanegwch y moron a berwch am 3 munud cyn ychwanegu gweddill y llysiau. Berwch am 4 munud cyn tywallt y dŵr a throsglwyddo'r llysiau i ddesgil i'w cadw'n gynnes.

Yn y cyfamser toddwch y menyn newn sosban cyn ychwanegu'r blawd a'i droi i fewn i gyfuno'n drwyadl. Coginiwch am funud cyn arllwyso'r llefrith yn araf tra'n cymysgu'n gyson. Daliwch i gynhesu'r gymysgfa nes ei fod wedi tewhau. Nawr ychwanegwch 3/4 y caws i fewn i'r saws ynghyd â'r mwstad, halen a phupur.

Daliwch i goginio nes fod y caws wedi toddi yna arllwyswch y gymysgfa am ben y llysiau. Gwasgarwch gweddill y caws am ben y gymysgfa yna rhoddwch y cyfan o dan ril canoig gan bobi am tua 5 munud, neu nes fod y caws wedi toddi. Gwienwch yn unionsyth.

English Translation

Ingredients:

3 carrots, sliced
240g broccoli florets
1 cauliflower, broken into florets
90g garden peas, frozen

For the Sauce:
45g butter
45g plain flour
450ml milk
120g red cheese (eg Llŷn cheese or Lancashire), grated
2 tbsp Dijon mustard
1/4 tsp salt
black pepper


Method:

Bring a large pan of lightly-salted water to a boil. Add the carrots and boil for 3 minutes before adding the remaining vegetables. Boil for 4 minutes before pouring the water away and transferring the vegetables to a bowl to keep warm.

Meanwhile, melt the butter in a pan before adding the flour and stirring to combine. Cook the roux for 1 minute then pour in the milk in a steady stream. Mix thoroughly to combine and keep heating the mixture until it has thickened. Add 3/4 of the cheese into the sauce along with the mustard, salt and black pepper.

Keep heating until the cheese has melted then pour the mixture over the vegetables. Scatter the remaining cheese on top of the mixture then place the dish under a medium grill and cook for about 5 minutes, or until the cheese has melted. Serve immediately.
