English TranslationTroth Fraith (Mottled Bread) is another (but much less well known) classic Welsh fruited tea bread. It's very similar to bara brith in terms of constituents but does not contain tea. Ingredients:
240g plain flour Method:Sift the flour and bicarbonate of soda into a bowl before adding the mixed spice, cinnamon, nutmeg and the walnuts. In the meantime place the dried fruit, water and butter in a saucepan. Bring the mixture to a boil and continue boiling for 10 minutes before taking off the heat and pouring onto the flour mix. Mix thoroughly then allow to cool a little before adding the egg and beating to combine. Transfer the mixture to a well-greased 1kg loaf tin and transfer to an oven pre-heated to 150°C. Bake for about 90 minutes, or until the top of the loaf is nicely browned and a skewer inserted into the centre of the cake emerges cleanly. Allow the torth fraith to cool in the tin for 10 minutes before transferring to a wire rack to cool completely. |
