English TranslationThis is another classic version of treacle toffe (known variously as cyflaith, taffi triog and losin du) that dates from Victorian times. Here we have a mix of black treacle and golden syrup with dark brown sugar to make sweets (candies). Ingredients:
450g Demerara sugar Method:Combine the sugar and water in a saucepan. Heat gently until the sugar dissolves then add the butter, cream of tartar, treacle and golden syrup along with the vinegar. Bring the mixture to a boil then continue heating until the liquid reaches 131°C, as measured by a confectioner's thermometer. Turn the mixture into a tin that's been greased with butter. Allow to cool for 5 minutes then cut into squares with a sharp knife that's been greased with butter. Allow the mixture to cool completely before cutting into squares. |
