As a result, I'm adding this collection of cheesecakes to the baking section of the site. In essence a cheesecake is a cake made with a crumb or biscuit base with a cheese-based topping. The cheesecake can be baked or it can be chilled and the topping can be whipped, set with eggs or set with gelatine.
