This is a mini-mash quite similar to Sam Adams "Old Fezziwig" (or so I've been told) and is excellent as a Christmas ale. I'm adding this to the recipes section as part of my gear-up to Christmas. This is a spiced beer and that's what makes it such a great Christmas tipple. Ingredients:
20l of unchlorinated water
Method:PreparationAs with most of the other recipes here, this has been gauged to make 20l of ale. Only a basic listing of ingredients is given, and for a brewing method please see this page for a step-by-step guide. Also see this page for a list of the equipment you'll need. The very high sugar content here will give you a high alcohol content, but as a result it will take about twice as long to ferment. Follow the instructions given in the basic extract brewing page to make your beer. However, I will give you some brief instructions below: Place the crushed Crystal Malt, Chocolate Malt, and Black Patent Malt in the water and steep at 70°C for 30 minutes. Remove the spent grains then add the Dry Dark malt Extract, Honey and Northern Brewer Hops, and boil for ½ hour. Add the Cascade Hops and Irish Moss during the last 5 minutes of the boil. Turn off heat and add the oranges and spices. Allow to steep for 30 minutes, then strain. Cool the work and pitch the yeast. Allow to prinary ferment for 10 to 14 days and then transfer to secondary fermenter. Ferment for an aditional 7 to 10 days then bottle (use 200g fo Dry Malt Extract for priming). Age in the bottle for at least 10 days before drinking. Find more Christmas Recipes Here |
