Though generally called a 'beer', this is actually a hedgerow mead flavoured with spruce twigs. This is a traditional mead made with spruce twigs. Ingredients:
40 young spruce twigs (just the growing tips)
Method:PreparationAs with most of the other mead recipes presented on this site, this recipe has been gauged to make 5l of mead. Only a basic listing of ingredients is given, and for a brewing method please see this page for a step-by-step guide. Also see this page for a list of the equipment you'll need. Pick only the fresh-growing tips of spruce trees (May or June is the best time). Place in a large pot, add the water and bring the boil before adding the honey and treacle a little at a time. Allow to simmer for 30 minutes. Take off the heat and add the yeast nutrient. When the liquid reaches about 37°C add the yeast and allow to ferment for about six days. Scoop-off any scum and siphon into bottles. Allow to condition for about two weeks and then drink. For more information on Mead-making techniques see my basic mead brewing page. What you get here is a very 'short' mead that needs to be drunk quickly. You can use any treacle from light to dark. Dark treacle gives a very dark beer but the flavour of the treacle tends to dominate that of the finished product. You can also add other flavourings and spices such as horseradish (which is a Russian version of this recipe). |
