I have to lay my cards on the table and say that I'm extremely biased about this book. In some ways it's an old fashioned cookery book in that it takes you through the terminolgy of cooking, the things you need if you are going to cook properly and it takes you through the A to Z of recipes. Which is an excellent thing in these days of celebrity chefs; who can present their recipes on TV but cannot present them on paper to save their lives.

For anyone who is serious about cooking and cookery then this book is the bible of how to go about preparing meals — and meals of quality at that. This book gives you the groundwork of cookery. How to prepare the food as well as how to cook and present it. If you are a self-taught cook (as most of us are) then this is the essential guide both to how to make meals but also how to take your cooking to the next level.
What is presented is a no-nonsense, easy to follow guide to how to cook most dishes in the common repertoire of English/French cooking. Indeed, the front cover proclaims this to be 'The only cookbook you will ever need' and though there is more than a modicum of hyperbole in this statement it's also somewhere near the truth. If you have this book then you will find yourself referring back to it again and again.
The book allows you to build-up from the basics to being able to prepare much more complex meals. If any book deserves the title 'A Bible of Cookery' then this is it. t teaches you the basics, the fundamental techniques and sets you on the road to being a chef in your own kitchen.
If you have any kind of recipe/cookbook library then this is a book that simply must be on your shelf (though you will find that it doesn't stay on the shelf for very long).
